Vegetable Pancake

Ingredients (serves two)

1 zucchini grated
1 carrot grated
1/2 cauliflower grated
6 florets’ of broccoli grated
1 leek finally chopped
2 cloves of garlic minced
Pepper
Himalayan salt
Coconut oil to fry
Almond Meal approx 1/2 cup
Linseeds
2 egg whites
Cumin

 

Method

1. Combine all the ingredients and mix well so they are all combined.

2. Heat a frying pan with a tablespoon of coconut oil.

3. Divide the mixture into 2 or 3 patties (depending on how big you want them) and place one at a time in the frying pan. Flatten the pancake while it is cooking. Flip over after approx 2-4 mins of cooking. Cook on the other side and then your pancake is complete.
