Sweet Potato Nachos


1/2 cup light mozzarella cheese
1/4 cup, chopped green onions
1/8 cup sliced or chopped olives
Black pepper5 spears of asparagus
1/2 cup chopped zucchini
1 sweet potato
1/4 cup chopped sweet red peppers
2 tablespoons sliced jalapenos
1/4 tables spoon coconut oil
1/4 cup chopped red inions


1) Preheat oven to 180 degrees

2) Wash and slice the sweet potato in half, then slice the potato into semi thi strips.

3) Place sliced sweet potato in a bowl and brush with some oil, making sure they are evenly coated on both sides.

4) Place the potato’s on a non stick baking shet and place in the oven. Bake fir approx. 10 mins and flip to the other side

5) Take potatoes out of oven– they should be semi crisp at this point.

6) Add the remaining toppings, with the cheese being last.

7) Place back in the oven until the cheese has cooked through.

8) Sprinkle some black pepper if you with. Serve and enjoy.
