Sweet Potato and Lentil Curry


1 large sweet potato, peeled and diced
1 onion diced
2 carrots, peeled and sliced
4 tsp[ cumin
1 tsp ground coriander
5 pitted dates chopped
1 small apple diced
2 cups of water
2 cups of split red lentils cooked till soft in 3 cups of water


1. In a large saucepan cook onion in some coconut oil. Add the garlic and ginger and keep stirring
until soft.

2. Add carrots and cook for a further 2 mins.

3. Add sweet potato, spices, and water (you need just enough water to cover the ingredients). Stir
and bring to boil and then simmer and cover. Cook for about 20 mins or until the sweet potato is

5. Serve with lime and a dollop of Greek natural yoghurt and fresh coriander.
