Super Nutritious Bircher Muesli

Ingredients (keeps for approximately 1 week)

2 Apples
I lemon
1/2 cup natural apple juice
3 Cups Rolled Oats
1/4 cup Sultanas
1 cup water
1.5 cups low fat NATURAL UNSWEETENED yoghurt
1/2 cup almonds– Chopped
1/2 cup whole linseeds
1/2 cup chia seeds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
Fresh berries and organic honey to serve (optional)

Method

1) Wash and finely chop the apple, leaving the skin on.

2) Squeeze juice from the lemon and pour over the apple immediately, to prevent it from going brown.

3) In a large plastic bowl, mix together apple, oats, sultanas, juice, water, yoghurt, almonds and seeds. Cover and refrigerate overnight. It will keep for approximately 7 days.

4) To serve, place the bircher in a bowl, stir in some water if it has dried out, and top with fresh berries and honey (optional).
