Stuffed Chicken

Ingredients (serves 2)

2 chicken breasts (skin off)
Spinach leaves
Button mushrroms
Basil, parsley, oregano, thyme, rosemary and lemon juice (blended together)
25g walnuts crushed


1. Preheat oven to 180. Line 1 baking trays with non—stick baking paper.

2. Slice a pocket into the chicken and fill it with the herb mixture, spinach, mushrooms, and walnuts. Once filled, close the pocket with toothpicks.

3. Marinate the chicken with some paprika and oregano.,

4. Place foil over the chicken to keep moist whilst in the oven

5. Bake for approximately 30 minutes. Or until cooked through.

6. Serve with rocket salad or green veggies.
