Stuffed chicken with berries

Ingredients (serves 1)

1 chicken breast
5-10 spinach leaves
10 frozen raspberries
20g low fat feta

Topping ingredients nut mixture

1 tablespoon almond meal
1 tablespoon of flaxseed meal
1 tablespoon of coconut oil
1/4 cup macadamia nuts crushed


1. Cut the chicken breast lengthways to open up and fan out.

2. Fill it with 5-10 spinach leaves, frozen berries and crumbled feta.

3. Fold the half of the chicken over and get toothpicks to make it stay together.
For the topping,

4. Min in the crushed macadamias with the almond meal, flaxseed meal, and add a spoonful of coconut oil. Mix it till its well combines.

5. Press the nut mixture over the chicken.

6. Bake in the oven for approx 25 minutes, until the chicken has been cooked through.
