Quinoa, spinach and ricotta salad
Ingredients
200g quinoa
Olive oil
2 tbs balsamic vinegar
1 garlic clove crushed
Tsp cumin
200g reduced fat ricotta
Cucumber chopped
150g spinach
4 spring onions diced
Method
1. Cook the quinoa according to the packet instructions. Drain well and toss with 2tbs of oil, vinegar,
garlic, and cumin.
2. Toss with the rest of the ingredients and serve.
3. Great to have with poached chicken or steamed fish.
