Guilt Free Pizza Bites

Ingredients (makes 24)

2 cups grated cauliflower (make sure it is dry)
1/4 Cup egg whites
1 cup low fat cottage cheese
1 teaspoon of oregano
2 teaspoons parsley
1/4 teaspoon garlic powder
1 tablespoon coconut oil

Method

1. Pre-heat oven to 180 degrees

2. pray muffin tin with olive oil spray

3. In a hot frying pan stir the ‘cauliflower rice’ until it is slightly translucent (about 6 mins). Place in a bowland let cool.

4. Place all the other ingredients in a food processor and blend until smooth.

5. In a bowl combine the cauliflower rice and blended ingredients. Mix Completely.

6. Evenly spoon mixture into your muffin tin. Press the pizza dough down evenly and firmly. To make sure it sticks together.

7. Place in oven for 25-30 mins.

8. Let them set and cool down. Once cool, remove from muffin tin.

9. Use pasta sauce for a dipping sauce.
