Grilled Lamb Chops with mango salsa

Ingredients (serves 4)

1 ripe mango diced
1 tomato diced
1 onion chopped
1 cup of lime juice
Fresh parcely, chopped
Fresh mint, chopped
Sea salt
Black peper
Cumin, ground
Cayenne pepper
500g lamb chops.


1. Set grill to medium-high.

2. Combine mango, tomato, onion, lime juice, parsley, and mint. Season with salt and pepper. Toss to combine well. Cover and refrigerate for 10-15 minutes to absorb flavours.

3. Meanwhile, season lamb with salt, cumin and cayenne pepper.

4. Grill the chops until browned or cooked to desired doneness, about 4-5 minutes per side for medium. Place into a serving dish.

5. Top lamb chops with mango salsa.
