Clean Eating Satay Sauce


Finely chop half a red onion
2 cloves of garlic chopped
1 red chilli chopped into little pieces
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp coconut oil
Juice of half a lime
3 heaped tbsp NATURAL crunchy peanut butter
3 tbsp shredded coconut


1. Heat frypan with the coconut oil and then add cumin, coriander, red onion, garlic and cook for about 1 minute.

2. Add the peanut butter, coconut, chilli, lime juice and about 1-2 cups water, depending on how runny you want it and stir thoroughly until combined.

3. Simmer for about 10 mins on low heat.

4. While its simmering chop up chicken breast and a bunch of yummy green veggies.

5. Brown your chicken in a wok, add vegies and stir fry for a minute or so, then add your cause and cook for another few mins.

6. Then it is ready to serve. YUM!
