Clean Chocolate Tart

Ingredients (serves 1)

BASE:
1 cup hazelnuts
1 cup desiccated coconut
6 large medjool dates
TOPPING:
1 ripe avocado
3 heaped tablespoons cocoa (natural from healthy food store)
3 tablespoons coconut oil
1 cup medjool dates, deseeded
1 cup of raspberries (frozen or fresh)

Method

1. Lightly grease a spring form pan with coconut oil.

2. Place all ingredients into your blender or food processor, blend until well combined, it may take a little longer then you expect. Press firmly into prepared cake tin, place in the freezer. Do not worry about washing your blender or food processor, let’s start the topping.

3. Blend the first four ingredients until well combined, add raspberries and quickly pulse, you want the raspberries chopped but with some chunky bits remaining,

4. if using fresh raspberries simply mix through gently.

5. Smooth topping over base and freeze.

6. Store in the fridge and enjoy!
