Chilli prawns with lemon

Ingredients (Serves 2)

500g Green prawns
1 medium red chilli
3 cloves garlic
1 cup fresh basil
Olive oil spray
2 tablespoons lemon juice
1 medium lemon
Chilli prawns with lemon


1. Combine the prawns, chilli, garlic in a bowl. Season with pepper. Set aside for 30 mins in the fridge to marinate.

2. Pre heat a hot plate or frying pan over high heat and lightly spray with oil.

3. Add half the lemon juice to the prawns and toss to coat. Ass the prawns to the hot plate or pan and cook for 2-

3 minutes each side or until they are cooked through. Drizzle with the remaining lemon juice.

4. Arrange eh basil leaves, rocket and prawns on the plates. Serve with the lemon wedges.
