Carrot Cake Oatmeal

Ingredients (serves 4)

1/2 cup wholegrain oats
1/2 cup water
1/2 cup grated carrot
1/2 mashed banana
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 teaspoon ginger
1/2 cup Greek yoghurt
1/2 banana chopped
6 almonds or walnuts
1 teaspoon peanut butter to serve (optional)


1. Cook the oats in water on the stove for approximately 5 minutes
2. Add the grated carrot and simmer with the lid on for 5-10 mins until the carrots have softened and melted
into the oats.
3. Add mashed banana and the vanilla extract, cinnamon and ginger and stir in until the oats thickens.
4. At the end stir in the Greek yoghurt until the oats get creamy.
5. When serving, place on top the rest of the banana-n chopped up, nuts and optional peanut butter.
