Cajun Chicken with avocado salsa

Ingredients (serves 6)

200g Sweet potato
Olive oil spray
200g raw, lean chicken breast
1 teaspoon Cajun spice
1 punnet of cherry tomato
1/2 avocado
Baby spinach
1 lemon


1. Preheat oven to 180. Line 2 baking trays with non—stick baking paper. Place the sweet potato wedges on tray and sprinkle with paprika and oregano.

2. Place the chicken breast on the other tray. Sprinkle with spice mix. . <lightly spray with oil. Bake for 15-20 mins or until golden. .

3. Meanwhile, combine the cherry tomatoes, avocado and spinach leaves in a small bowl.

4. Slice the chicken. Divide the sweet potato, chicken and avocado between plates. Serve with lemon.
