Breakfast Quinoa

Ingredients (serves four)

1 cup quinoa
2 cups water
1/2 cup dried dates chopped or goji berries
2 tablespoons Agave (health food store) or honey
1/2 teaspoon of cinnamon
1/4 cup fresh ricotta cheese or Chobani natural yoghurt.


1) In a saucepan cover the quinoa with water and bring to boil. Cover and cook over a low heat until water has been absorbed– about 10-15 mins.

2) Add the dates or goji berries, honey or agave, cinnamon and stir well

3) Place in bowl and top with fruit such as, banana, strawberries and a table spoon of either ricotta cheese or yoghurt
