Baked Orange Salmon

Ingredients (serves 4)

 Olive Oil Spray
 400g Salmon Fillets
 2 tablespoons of reduced salt soy sauce
 Ground black pepper
 1 orange thinly sliced
 Fresh parsley, chopped



1. Lightly spray shallow pan with oil; set aside.
2. Season salmon fillets with soy sauce and pepper. Arrange fillets in prepared pan. Top with orange slices.
3. Bake, covered, in a 400 F (200 C) oven for 15 minutes or until fish just flakes easily when tested with a fork.
4. Transfer in a serving platter. Sprinkle with chopped parsley.
5. Serve with greens and enjoy.
