Baked Eggs with Spinach and Feta

Ingredients (serves two)

Olive Oil Spray
Baby Spinach
2 raw eggs
90g Low Fat ricotta cheese
2 slices of wholegrain toast
Baked Eggs with Spinach and Feta

Method

1. Preheat oven to 180 degrees. Spray two oven proof dishes lightly with oil or (ramekins)

2. Divide the spinach between the dishes. Crack an egg into each dish. Sprinkle with the ricotta
cheese. Season with pepper.

3. Place the dishes on a baking tray. Bake for about 10 minutes or until the eggs are set.

4. Eat with one slice of toast.
